How We Care For Cutlery

Classic Stone Sharpening
We hand sharpen with quality diamond stones that best preserve the original
knife geometry, while getting edge incredibly sharp. Only enough edge is removed to create the right burr for sharpening. The blade is then touched up with a series of stones, progressing to the correct finishing abrasive. A clean bevel with an incredibly sharp edge is produced.

Diamond Wheel Sharpening
Our water-cooled, electric diamond wheels are perfect for taking care of chips and other edge imperfections. Diamond wheels are also great for specific degree angle sharpening that will produce a consistent edge. A clean bevel with an incredibly sharp edge is produced.

Masahiro Whetstone Sharpening
A series of Masahiro whetstones are used to refine single bevel knives as well as sushi and filet knives. The blades are then finished with a higher grit abrasive to give the knife the ability to create the ultimate slice.
